Here are some of the best woodcarvers I've seen yet on the web.

Mike Dunk has a nice site that includes tips as well as his excellent carvings. His forte is mainly birds, but he also branches out a bit (Check out his naturally finished Bass!)

Bill Judt runs the woodc@rvers list, is the main editor on the Woodc@rver e-zine, and also has great site. (Busy man) He mainly does relief, and his site includes tips as well as his excellent carvings. The carving books he's authored are invaluable to learning how to execute a relief carving.
Joe Dillet does a bit of everything (and does it well), but does mostly heavy carving, as in, mantels.
Ivan Whillock is a classically trained woodcarver with his own style. He's written a few books on the subject, and he's kind enough to put a free pattern on his site every month. He's one of the few net carvers that I've met. He mainly works with relief and people.
Mike and Susan Irish are the ones who gave me the "Golden Chisel" design award. If you need a pattern, they are definitely the ones to see. They have several packages available (outstanding detail) and some free ones as well. They also offer some online carving instruction.
Gene Graham is one of the guys I trade wood with. He's mainly into high relief indian busts. He claims he hasn't done this for very long, but looking at his work sometimes makes me doubt this.
More to be added as time goes on and more woodcarvers come on line.
